Ducato clock settings and truma combi

Evening all, after owning a few caravans we have taken the plunge and now own a 2017 Adria MH, my apologies if some of my queries have already been discussed....how do you change the clock between the dials? the settings mode switch to the right next to the fog lamps only give  limited options, beep volume, service, that's about it, Ive tried everything! our van has a Pioneer AVIC-F980DAB camper nav fitted not the factory fit job so you cant alter the clock that way, any one got any idea what I can try would be appreciated.

we have just been away for two weeks in it and we had a pressure release valve type  noise fairly constant is this normal with the truma combi? it did smell at times like a hot iron smell mainly if we put the hot water into hot setting , most the time it was in eco. tbh we didn't seem to have a lot of hot water in eco mode

Up date for those who may come across the same problem. 

The pioneer AVIC camper model was retro fitted from new, apparently it needs a different wiring loom which has now been done, all settings for the vehicle can now be done through the pioneer unit using the steering wheel controls.  Only problem now is the nav doesn’t work because a wire has been left unconnected, frustrating to say the least because it’s got to go back. 

Can anyone tell me how to take the iPad holder off?  For the life of me I can’t find a way to pull the pioneer unit out to see if it’s anything obvious. Can’t even find a utube clip! 

One thing we have noticed/learnt is the Motorhome Industry and the way it operates is......different, a polite way to put it.
