Bee-ginning with honey, finishing with cider – experiences at Hiver Honey and Beer Tasting

Tucked away on London’s Bermondsey Beer Mile, Hiver Beers’ Taproom offers more than just a great pint. The bar and events room are both warm, welcoming spaces where stories of bees, brewing and craftsmanship are told. Spending a day with Hiver Experiences was immersive and interesting – the day consisted of hands-on learning, as well as generous tastings and a genuine appreciation for nature’s small but mighty workers.

The morning began with a honey harvesting workshop that immediately set a cosy, communal tone. We were first presented with one of the Hiver beers – a blonde beer brewed with honey (a fabulous way to start the workshop, crisp and refreshing with the warm honey undertone). We were then invited behind the scenes to learn about the fascinating world of bees – from their intricate social structures, their role in ecosystems and the journey honey takes from flower to jar. We also sampled a range of honeys from across the UK, from urban honey produced locally in Kennington Park, to tree ivy honey and heather honey.

After establishing a solid foundation about the bees and tasting the fruits of their labour, we were then encouraged to harvest the honey from a honeycomb. Each of us carefully scraped wax away from the honeycomb, a meticulous but satisfying process that required patience and attention. Once the comb was prepared, the honey was harvested using a centrifuge, spinning the golden liquid free. Watching fresh honey pour out, knowing we had helped extract it, made for a rewarding experience.

After a short lunch break where we explored the nearby street food at Maltby Street Market, we returned to Hiver Taproom for the cider tasting workshop, which proved just as insightful. Here, we explored the history of cider-making and the nuances of production, learning how apples, fermentation and technique shape flavour. The tasting journey took us from smoky, complex ciders with surprising depth to sweeter, fruity varieties bursting with freshness. Each one told a different story, and all were thoughtfully explained. We were encouraged to look, smell, and then taste, which created a mindful appreciation for each drink and helped make the experience both educational and indulgent.

By the end of the day, Hiver Beers had offered far more than tastings. It delivered a sense of connection – to craft, to nature, and to the people and creatures behind the products. Set against the buzzing backdrop of the Bermondsey Beer Mile (well, actually 2 miles), it was an experience that felt both enriching and wonderfully enjoyable.
